I'm having trouble finding a way to update my 7 days server to Alpha 19. Does anyone know how to do this?

On the basic tab. There's a drop down for version. Change to experimental, however note:
It's EXPERIMENTAL, meaning NOT GUARANTEED TO WORK.
SO if you run into problems, you'll absolutely need to go through the process at TFP forums to fully rule out any documented or undocumented known issues with the current "NOT GUARANTEED TO WORK" version of the game...
Once you've ruled out that, then the host provider will be able to offer some assistance.
