Hi guys i wann set my Player Lvl via the option at the "Basic" options but i dont know it will not work anyone have a tip for me?

It should work. But keep in mind, ARK considers your Ascension Levels when calculating max level.

So you have to "Ascend" (Defeat vanilla bosses on the story maps) in order to get the last 50 levels or so.

Thanks for your answer but for what is the Option good if i still need to defeat the Bosses to reach lvl 155?

Cause if you do math, you can adjust the max level to what you want, keeping in mind the ascension levels... Like, max level 205 = 155 without Ascension. So if you're not playing on a Ascension map, you can allow that to happen.

Like I have a server set to 250, with XP levelled the way I want, and the engrams re-balanced.
